Porridge sticks!

These are the absolute best thing I have been ever told about!

Ingredients

Porridge… I usually do a large bowl full.

Water/breastmilk

Fruit or your choice. I’ve used chopped up pear, chopped up nectarine, bananas, banana and raisins, mixed fruit, blackberries, blackberries and bananas, strawberries and dates, bananas and dates. The options are endless! Basically use whatever you have got in your cupboard!

Optional- flax seeds.

I plan to try one with chia seeds…I’ll let you know how I get on with that one first.

Method

Mix it altogether!

I used the blackberries we picked on our walk for this batch.

Make sure it’s quite thick and firm enough to shape into fingers.

The ones in the picture are a bit wet… but still tasted fabulous! 😉

Put them on some greaseproof paper.

Pop in oven 200c for about 30ish minutes!

Once they are crispy on the outside. Take them out and leave to cool.


These can be also frozen.

They are a fabulous healthy snack and I’ve also started to give piglet one before her last boob feed to fill her up and try and make her sleep longer… and at the moment it’s working… not all night yet but an improvement!


This is also great if you’ve got let over porridge from breakfast. Instead of throwing it away keep hold until the next time you put the oven on. We can be frugal as well!😂

Blackberry Mousse

I’ve made this mousse before but substituted the blackberries for strawberries.  I suppose you can just use whatever is in season.  

Ingredients:

1 avacado 

1 banana 

1 carton of cocunut cream (look for a one with as much coconut and little added rubbish!)

1 pint of blackberries.  (I forgot to weigh them sorry but they did fill a pint jug!☺)
Method:

Throw it all in a food processor  (simples!)

Blitz it until nice and smooth

Look at the colour on that!  Stunning! How often do we get to give our children food that colour that is not filled with crap! Winner!

I then put them into little pots like these.  I got these ones from homebargains. They’re about £1.70ish… for about 8 tubs. So I  bought 3 lots.

I then just chuck them in the freezer and take them out when needed. If organised in the morning… ha as if! Just put them in the microwave for 20 ish seconds.

In the summer they’re nice to leave a little bit frozen so they’re like ice cream.

I really like them as if piglet has been a bit fussy with dinner she’ll always eat one of these and they’re full of good calories. 

Plus fab if your little one can’t have dairy.
